pressure test 3 hatted chef Martin someone.. cooked a special dish for tonight rey is keen Martin benn it is

10 times more difficult technically he said.... the old 5 umani salty sweet bitter
toffee apple looks like a rey thing..looks likes leaves in the forrest
they taste it.. the apple has been made into one long layer ribbons coated in toffee and rerolled

nothing is straight forward
the apple should be one ribbon
dont burn the caramel
the leaves are all different from freshly fallen to old leaves

at t he end you need ten perfect components

3 hours and 45 mins in look and taste 5 mins to plat up
top two dishes go to final

Pumpkin leaves first for Emilia frying in oven
I think Laura will have the toughest time...she agrees
That puree has to dry in thr oven for 2 hrs
bitter caramel is crucial but not burned
rey really excited he has eaten his food and read recipes and feels he has an advantage
mel hovers and they chatter on a bout winning...

em look at that red stuff... she is motoring through it her red caramel is on track
and now she has to spiralise the apple and is unhappy with it... twice and both times has cracks not happy... judges say have another go while we watch no go away she says...third time good

rey onto it now he seems to find it easy Martin approves of it.... rey does another as a backup and stuffs it..

Laura having trouble understanding the recipe.. ah onto the spiraliser and it aint happening.. judges note she is struggling.. it just doesnt seem to want to work

now chef advises them to do something with caramel but I dont understand it

em rolling apples one good the other a dogs dinner.. she tosses it

rey has two and he starts rolling too... not sure if the shape is as good as it should be

chef says make more leaves than you need if you can

em battling on..... she checks on her leaves.... and she ha to work in the hot oven to do it properly.. youch! breaks one... setting another as judges hover... looks perfect they all agree... so much to do

rey agrees he is onto the jelly now uhoh his apples have collapsed

poor rey still as dead as a doornail.. cant he fix it..... no time to restart he pushes them into shape before he gets them back in the oven.
he is on leaves now and they seem all right

one hour to goem onto the red raspberry leaf now..not having much luck she restarts

now laura starts on hers... so exhausting she says but she is happy it looks real she says

Jock talks with rey about leaves.... still in the pump and persimmon leaves.. very important. they were fried but not oily.. mine are.. he puts em in the ove to dry them out... he knows it is a risk

em on the leaves... the raspberry keep breaking batch number 4.... looking better.. phew.... ready to assemble or move onto the chantilly cream

rey is very happy so far.. apart from apple Jock is terrified dehydrating........... oh dear when he checks they hve lost their shape

then laura starts working on stem of the leaves

rey does too but is not reading the recipe

em gets onto the stems now... oh no... her caramel has burned

andy loves the bitterness in the carmel.. balances
chef agreed... leaves had the flavours not t he imprints
mel thought the flavours were amazing
Jock said it is an amazing effort for someone who is not a pastry expert

going mad being perfect and the twig breaks the next one works
funny looking apple but it does look nice
a few more t ears and now time to taste
apart from apple it looks lovely... say andy
chef agrees apart from the apple
