When I think of gooey, I think of runny caramel or dessert dishes. Gooey eggs is not it.
Hayden is making egg filled ravioli

Adding extra rum to Callums caramel.. when it goes into parfait it might thicken too much so makes it runnier

Everyone arriving at the restaurant Thai Ute in Ringwood East we are doing the suburbs this week.. isnt that where most of us learned about food with our families?
Talking about favourite Thai dishes green mango larb pad thai.....
2 teams tonight Jock just goes ine two one two to pick the teams
Team 2 has an extra person who will sit out, not cooking
Red haired Sarah will sit out... unlike the other challenge where one team was down one member
Team Orange captain is Khanh
Team Aqua is Tessa
Both know Thai
2 entrees, 3 mains
50 customers each

Tessa, Poh, Ben, Reece, Laura, Rose, Simon and Amelia team Aqua
Tessa thinks they are the underdogs////they are with Poh
Khanh apologising for offending anyone ahead of time

Callums first dish out for Orange team
Kingfish on beetle leaves with a pickled papaya salad
Lots of chillis to slice
Brendan for Orange is cooking deep fried soft shell crab for entree
Khanh very happy with people's knowledge
Team Aqua has rice balls for entree, Poh and Reece working on these congee roasted rice oh it sounds vile
their other entree is bitter gourd salad with kingfish ceveche...yuck simon and rose are on that
Poh seems to be in charge of both entrees
so far I wouldnt eat any of these dishes
Tessa isn't sure about the rice balls but Poh pushed to do them

Judges talking about their go to on Thai menus of course melissa knows it all
Sweet, sour, bitter and spicy all needs to be perfectly balanced
Jock says it smells delicious already.

Chicken larb Laura making it.. neve done it before... so tessa has to be more hands on.... she guides Laura

And braised sticky pork belly braise in oven for 90 mins
Sweet, sour, bitter and spicy all needs to be perfectly balanced

Laura is inexperienced in Thai dishes but it has so many noodle dishes, so similar to pasta 
Khanh trying to throw Laura off by talking herbs but she is awake to him
Laura asking if she should season the chicken... no says Tessa
Laura looks a bit panicked doing the chicken, toasted rice and dressing she loves thai but has never cooked it

the third dish is bream .... Aiming for 2 people per fish on orange team. Means they need to prep minimum 25 fish
judges talk about their go to places when young.. Jock said in Scotland thai was unheard of

Amina working on the clams in chilli basil sauce for team aqua gorgeous colour for the sauce

Andy says that betel leaf flavour works amazingly in the dish

Crab is crunchy
Sauce is beautifully spicy and well balanced
Hard to split them right now
Normally you can pick one over the other just by a bit but this is a hard one.

it is cooked perfectly and the sauce it is the star so delicious.. it was smart doing the fish whole.. totally yum and beautiful. it looks amazing too
