Brown is in trouble now Huddle to discuss menu
Grey menu is so different and complex in comparison
Sarah has them Tasting everything
what to keep what to ditch Khanh is really helpful
Sticking with the fish and ice cream
less than 90 to go sarah is worried

Grey changing the dessert, ditching the buns basically it is a disaster.... Adding cake and apricots to the dessert

Khanh being positive...everything is fine.
Keeping the menu but adding the brown team flair

Jock not happy the choux buns have been ditched Andy yells out and tells Emelia who isnt happy either

Grey keeping the tuna and chicken main, or versions of them anyway

Andy asked if it is bad he is secretly enjoying it

Grey not happy with the sauce, think it needs a lot of work callum adds black garlic

Jess and Reynald keeping the dessert compote and that is all
Poh loves the desserts direction a twill and berries

45mins to go

Sarah telling them to taste everything
She is most concerned about the pasta so much to do

Mel calling Poh and Sarah to the front And another twist is coming
10 of each teams diners are vegetarian
Brown will need to come up with entire new dishes for entree and main
Brown have Simon. He is good at Vegetarian meals.


Grey can modify the existing dishes
Different filling for the tortellini would work easily, maybe a spinach and cheese


Simon's time to shine for brown team
He has done some wonderful vegie meals before.

it happens in real life but generally most menus have dishes which already cater to this

Sarah being positive helping simon in the pantry
Purple cauliflowers balance and pan fry with a vinegarette and nuts
Goats cheese into the tortellini burnt butter

Emila asks brandon if he is doing goats cheese and burned butter cos she had it on the weekend and it was disgusting he does that inscrutable asian face and then tells her to walk away.......... I would have whacked him one...

Grey using asparagus for the entre it should go well with the tuna
And roasting mushroom for the main

Only a few mins to go, diners arriving

sarah has everyone making the tortellins....

First batch is in to cook

10 seconds until service starts

Poh happy with their entree Tuna tartare vegies get asparagus instead of tuna

Grey entree first to judges
Andy likes the ingredients that don't need much prep. Andy says smart to use the prepped tuna
They like the flavours Think it is well balanced
Trying the veggie asparagus now
Andy says he would prefer the asparagus dish
Smart, apple and asparagus work well together
Mel likes the textures and balanced flavours

Brown has no dishes going out yet
Veggie pasta is almost cooked
Plating And dishes are going out
Brendan is concerned the pasta is too thick
Looks nice
Scallop and prawn tortellini
Goats cheese and herb tortelini
They are concerned they are still rolling pasta during service
team were behind the 8-ball in the first place. Just on the conversation so far I think they will be in trouble because of grey's prep.
The pasta is too thick in places and hasn't bloody well be told could he
Bisque is beautiful
Filling is good too but the thickness is an issue

Veggie one now
Mel likes it
Flavours all work well
But pasta is again too thick

Entrees are done now
Onto mains
Something is wrong with the grey sauce
callum added black garlic to thicken it....
but it is still wrong...

Still trying to fix the sauce on grey teamcallum says it takes hours to do properly and it cannot be redone.. they should have done a different sauce
Just going to use it as it is now as it is just not going to work

Grey first to judges with main
Chicken , mushroom and chestnut
Pine mushroom and chestnut
They both look similar.

Chicken first
Jock likes the mushrooms
But something is unpleasant
Puree is strange and the sauce
Black garlic doesn't go with the dish.. the mushrooms are lovely but the sauce no!

Onto veggie one now
Puree is still a problem doesn't work with the chestnut
Some nice elements but some unbalanced ones too
They got lost in the woods

Brown team mains now
Cooking the fish with crispy skin
Potatoes under the fish and a sauce and salad to finish and they added a fennel salad

Veggie dish looks rather nice
I actually prefer the look of the cauliflower they praise it too

the fish
Mel loves the construction of the dish. Well balanced. she loves the addition of the fennel
Jock says skin was perfectly crisp and loves the fennel and sauce

Onto the cauliflowerJock says Simon knows his way around veggies a great dish the cashew emulsion
andy agrees . it sings

they love it

Looks like one course all.
Tough to call right now
Entree to grey
Main to brown
Dessert to decide by looks of it

Brown - honeycake with marscapone, apricot and a twuil and some sorbet
Hope that sorbet is good the dish is huge and looks huge
Brown first to have desserts out

Andy likes the combo of flavours it works so well

Andy pleasantly surprised
Mel loved it

Grey plating
Looks a very soft dessert Poh tastes and loves it
it certainly looks pretty

Sorbet is good says Jock beautifullly balanced

Great flavours and a Delicious dish
Although
What would the choux pastry have been like.... Jock wanted them
I cant call it I want to say Brown team but I just am not sure

Judging
what a hell of a start to twist week...

Entree first
Grey team. Clever use of original prep. Great start.
Apsaragus, should always be as good as the protein dish, yours was better
Brown team. Bisque had great depth but thickness of pasta was inconsistent
Mains now
Brown team. Kingfish perfectly crispty. Potatoes great and fennel we loved.
Cauliflower, nicely cooked but it was made amazing by the cashew cream
Grey team. Great idea with the pine mushrooms which were so good but the sauces didn't taste nice at all
Even stevens

Desserts
1 was simple but delicious.
The other so much going on but also delicious
We couldn't split them
So we looked back at the rest of the menu faults
Problems with grey teams chicken and mushroom were greater than the brown teams pasta

Brown Team wins!

tomorrow night a pressure test sat by Darren Perches
I cant help but wonder, would it have been a different result if Callum had been captain ?

Encase in mango mousse

Laura is wiser.. she knows that sometimes things are done a certain way for a reason
Laura onto the curd first.. she is aware of the twist
It would just be cruel if the twist was you lose the recipe

Jess is happy with the recipe i get it she said
She plans to multi-task cos of all the elements
She is excited about making one of Darren's desserts
Jock says to darren you are part pastry part dr evil

Darren says curd should be underway by now
Someone is beeping....who is it though jess Lots of whisking

Hayden very focused
He is worried they will end up with an eaton mess with his shakey hands1

Reynald is confident he isn't going home today
He says he is 10/10 he is staying....could that be his downfall?

Jess and laura have curd done
Onto the meringue shell laura whisking over a double boiler at 65 d to get rid of the egg taste... wants it really glossy and cold

2.5 hours to go


Amina looks to have started in a different place to the rest
She has changed the order.. instead of doing t he curd first she starts on the pav
Darren looks a little concerned... says it is an interesting tactic I think she is really worried now
If she wasn't already.

Darren is worried Reynald is too confident
He is also worried about Amina

Andy talks to whio Jess is a bit worried but is pretty happy anyway
she is Following recipe all the way
Trying to get that perfect thickness

Laura knows in her heart there is another twist happening. something bigger is on its w ay...

Poh disorganised as always and has lost her scissors. she feels confident about getting t he thickness right
Only 2 hours left now

Amina is really behind everyone else but she feels okay gantry try and urge her on

Laura is onto the coconut and caramel creme and is making them at the same time
Coconut is in the oven

Jess looks like her caramel is pretty much done
Putting on top of the curd and back into the chiller gantry cheer her she is on par with Laura it seems

Reynald looks a bit concerned that so many are ahead of him gantry cheer him too
Poh is following and then says that t hat is weird and then gets it
Measure measure measure

Laura has her cream on top of the curd now feels good as she is right on it doing the pannacotta now

amina oh dear she ain't gonna make it only done 4 of the nine elements... she knows she is flagging

That is cruel.. and for the life of me I don't get the point of it. it is not as if they will ever cook it again...
They all look like stunned mullets

Some have recovered better than others
Poh has gone blank - Not for the first time in the competition. Cant remember anything with 1hr to go

Reynald doesn't feel confident anymore

Callum didnt read to the end
Mischief from the judges this week

Laura just pushing on
She was well organised.
She only has the mousse, white chocolate and glaze to do without the recipe... she knows how to do it all.... so off she goes with the mousse
