Tonight is a service challenge
Two long tables
Laura has been in every team that has lost so far this season she wants to break the curse
two teams each cooks 3 course meal
They pick their own teams
1 team is cooking 3 savoury courses
1 team cooking 3 sweet courses
Sweet vs Savoury
Reynald wants to do savoury but was dragged to sweet
Laura called him a traitor but I don't think he was that fussed about moving.
Reynald, Poh, Jess, Callum, Reece, Emilia and Tracy on team sweet with Reece as Captain
Sweet is pink

Brendan is captain of team savoury with Tessa, Khanh, Laura, Brendan both Sarahs
Savoury is yellow

Matt Stone & Jo Barrett appear...hot young chefs to help them out one is savoury and one is sweet

Yellow still planning many strong coooks with strong personalities says Brendan
Matt saying start lively acidic and fresh
Simon suggests a veggie dish first, seasonal vegetable salad tomato emulsion
Tessa says Calamari, Matt says you have to use all of it tentacles and hood and verblanc says tessa
Laura suggests roo, beetroot and berries

Judges expect big things
Said they would have split the teams the same way if they were involved.
They say the guests will get the best out of the teams

Poh says she loves working with Emilia as she is organised and assertive which she needs with her scatterness

Looks like pink team have the 3 strongest dessert cooks teamed up with a not so strong dessert cook.

He wants all hands on deck To push the dishes out quick
Jo reminding them to focus on portions. First ice cream needs to look the same as the last
he is doing a good peptalk.

we have strong cooks we just need to pull together
Matt advising to pull someone off the final dish to help 1st service

Jock says this will be the most difficult judge yet

Mel likes the colour contrasts
The colour difference makes it look very pretty.
Mel says this course gets the palate ready for more
Jock says a cheeky little number. His mouth is pinging with flavour
Andy says his palatte is awake and dancing
it is a cracker of a dish they all agree
Emilia and Reece watching the judges

they all loves the emulsion from Simon

Mel loves how bright and vibrant it is
Andy says the forgot to put very very tasty at the start of the dish name
Mel says a celebration of late summer vegetables

next plate for course 2 is done but it isnt right.. brendan thinks way too much squid
Matt hovers asking brendan what he thinks. Brendan feels it might send them home

At least they are doing a test plate, even though they know something is wrong.
If he doesnt like it why send it that way? he prays the judges willl love it

Andy says interesting flavour combos
The sweet dish with the parfait looks a bit boring compared to dish one but I bet it tastes delicious.

that squid had better have been fixed or they may be stuffed.

Texture and volume of squid is overwhelming
Mel's face screwed up a bit.

So many strong dishes .... 2 from 1 team against 1 bad and 1 good on the other ..... Right.....
She likes the plating but sponge is dry
He didn't add enough fat for the change to dark chocolate instead of white chocolate
He is worried now

He made the sponge for the wrong type of chocolate.
Can they quickly make a syrup to fix it or is it too late?
Jess suggests a chocolate ganache

Reynald says he can make 1 quickly

Reece says he usual adds milk or syrup to the cake to help with dryness

Mel likes where it was going but the cake is still dry
Not enjoying the textures
Ice cream and marmalde should work but don't mesh
Jock says doesn't taste like a Reynald cake
Andy says cant hide from that cake

Pink will win then. Callum, Jess, Poh, & Reynold are in that one.
Laura is always in the losing team.

Jo had a great time. Matt thinks they did well even with the chaos
Jock says the flow of each menu was impeccable
Yellow first
Course 1, emulsion brought the dish together beautifully
Course 2, tube of squid cooked beautifully. But tentacles not great
Course 3, kangaroo. Cooked perfect
Beets was textbook of how to celebrate every part of a vegetable. A great dish

Pink team
Course 1, sorbet was the perfect start to a meal
Good feedback for Yellow team.
Course 2. Exercise in restrain was a exhibition of elegance
Course 3. Choc cake looked stunning but cake was too dry.

Came down to dishes we liked more

Not much given away by the name or looks of the dish it is a black chocolate cube
Cracking it open

Inside is so pretty

Citrus isomalt wafer

And the box is white chocolate with ash mixed in to dye it

This is going to be a hard dish for them all

She is retempering the chocolate for a 3rd time

She is more confident with this attempt
