They are talking about what they have sacrificed to be on Masterchef this time.
Going over who left and who they have left behind
Lifting the cover and seeing what they are doing and it’s fish

Guess first round is guess and 2nd is cook

Guest chef is the fish man josh niland.. a genius at butchery and using different cuts...tuned a fish eye into a prawn cracker for eg

2 rounds tonight. the first is to name the fish laid out on the table. they go one by one
Walk up and pick a fish and name it. first five wrong go to 2nd round.. the pick the order by the way they walked in

Simon first and he chooses flathead.. which is correct
Callum next he picks pink snapper and is right
Brendon next he picks gar and is right
Sarah next she picks John Dory and is right
Emilia next she picks coral trout and is right
Reece next he picks tuna and is right

Laura next she picks flounder and is right
Tracey next and she picks rainbow trout and i s right

Poor Khanh he isnt confident at all.
Khanh is having trouble. he thinks all the easy ones have gone
Khanh next he picks yellow fin tuna and is wrong khanh is in cook off

Reynold picks salmon and is right
Not enough fish there. thinks Simon -Meaning it won't get back to him again either.
Simon picks ling and is right
Callum picks King George whiting and is right

Emilla picks rainbow trout but she is wrong

Khanh and Emilia in round 2.

Guessing the exact same fish as Reece and the same name. she didnt realise.. what a shame

Tracy picks cod.... and is wrong so is off to round two

Khanh, Laura, Emila, Reece, and Tracey are in Round 2.
our fishman takes a king fish and starts carving it up in front of them.
He Cut the scales off and gutted differently than most.. more a Jap style It is
a total nose to tail experience. Chris Badenoch would have loved this.

Creates a shank and shows all the different cuts. It is a wonderful thing to watch. He talls us the things about each cut.. way too fast for me to type....
Belly butterflies...mmm full of fat... plenty of flavour
Fish racks...yes just like a rack of lamb

they choose a number and then get to choose the part they want
Khanh 1st .. he goes for the dans.....

Laura picks tail chop.. lots of flavour on the bone she says...smoking of some kind

Rules 60 min must use fish they picked open pantry and garden

Judges talk about how to cook the fish. they have plenty of time for creativity... fish cooks quickly.

Emilia doing a seafood stew..... american sanfran Italian stew with mussels and clams.. crispy skin.. he warns her it is very lean.

Tracey doing pan fried Cutlet with sweet corn and chorizo sauce.. be careful that huge flavours don't overpower the fish...

As long as Khan and Reece are safe I’m happy
I know who I am hoping to go and it is neither of those two or Emilia.

Reece doing fish and chicken together.. buttersauce... to bring it together a potato fondant.. Andy teases him .. reece insists they work well together.. fishman warns him balance....

Laura in the garden..andy and josh follow her to see what she is foraging for.. she talk fish emulsion... Josh is impressed

Khanh doing his semi final dish that got him kicked out. He hopes it is his redemption dish and that he learned from first time
Khanh doing sweet and sour broth...Cooking fish in broth not frying it this time

Judges talk about what they are all doing..a bit worried for khanh
Emelia should be okay they think
not so sure about all tracy is doing

Laura cooks it on t he hibachi... half way too much otherwise....Laura cutting her rake in half...oh no said Jock
Judges questioning if other proteins are going to overpower the fish which is meant to be the hero. ...since when did they say that.. they just said it had to be used

Emelia takes seafood out and is trying to fix sauce as it salty.... caramelises the the fish
She worried that it is overcooked

Tracey having a problem with her sauce. the pork belly has overpowered it......

Reece starts to cook fish he has made fennel sauce he notes that the fish is fatty. it is c rispy and must be flipped.. r will he put it in the oven

15 minutes.

Cooking 2 bits as a back up about to put in oven to cook
Jock is querying Emelia should the fish be in the oven already?

Jock sees Laura fish and questions why she cut it in half she explains.. he says are you saving both no just one the piece on th e bone..... and Laura worries now He said it was so beautifully butchered and you cut it in half...........

Laura fish in the oven has cutting it off she mightn’t meet the rules
Khanh put fish in broth and cooking it slowly

Tracey cook cutlets and worried about cooking time

I want Khanh and Emilia to be safe but worried for both of them

Daniel Mould E fish out of the oven and resting now she starts playing and hopes it’s not over cooked
They are focusing on most reasonably evenly so it is hard to pick who will be the best and worst.
Khanh's temperature isn't right.

2 min left and khanh fish is raw only at 40 not 45 he’s going to do a poh and finish last sec
I am so worried for him. I'd prefer them all to have a decent dish, and one slightly worse than the other than one totally not right.

Khanh thinks it’s under but it might cook as it rest

Kingfish with smoked pippy sauce..it looks fantastic
Andy asks her about t he smaller cut..she said I made a decison that it was too big
when they start eating it they realise that it is perfectly cooked........ despite all the worry as they watched

It is a lovely looking dish. josh praises the skin... they all eat and love it...
Josh wishes he could get his chefs to cook it like that
mel praises it and loves the layering, very clever

He worried about cooking out the fat in fish
looks nice enough Reeces reminds them of every fish dish in London in the 80's or whenever and they are happy, but for someone else they would say that presentation is done to death
Lots of lovely colour on that dish.

She is so worried about it
Another dish that looks very nice. They are talking to her a lot more than the others before tasting it so it is either the dish of the day or the bottom as we have been guessing.

mel just had to say it and there the hag goes again.. really ramming it home.. over and over.. unnecessary

They have shown very little tonight other than worrying about all the other proteins so I would say she is safe.
