Masterchef for week beginning 12/07/2020

Here we go, recapping last week
Reynald is safe from elimination tonight

Other 4 have to cook 1 of 4 dishes picked from a bag. Veggie entree, fish dish, meat dish and a dessert
Large dining table today
Service challenge elimination
Will be joined by 6 of the hottest chefs in Australia
Reece wants the veggie dish

Emilia gets fish dish
Laura gets meat dish
Callum gets dessert
Reece gets veggie dish
Reece is ecstatic

Emilia says she feels good about the fish but
Doesnt cook fish a lot and the only time she did it this year it didnt go well

Going with classic flavours
Andy been waiting for more veggie or even vegan dishes from Reece
30mins of Reeces time down

Laura and Emilia talking about the challenge
Emilia worried about not having service experience
Last time she did fish she almost went home
Knows she needs to be clever with her dish
Her time starts now
Writing her plan down
Crispy skin barra with wilted fennel, an oil and japanese inspired broth
with only 4 elements she knows they have to be perfect

45mins till Reece has to start serving
Jock says his dish sounds quite safe
He wants to use flavours that work
Jock says they love classic combos but ask how is he making the dish finals worthy
They want more from him
They want to see his development

Reece questioning his choice of dish now. Too late to do anything new now

Emilia has her fish portioned and bones roasting for her sauce

Almost time for Laura to start
Laura has a clear idea of what she wants to do
Peas, mint and lamb is her concept

Going with another classic here

Mel says sounds a simple dish, how are you going to set yourself apart?

Mel saying she needs to create something exciting

Everything into the pressure cooker for her sauce

Callum left all on his own
Reece has 20mins to go

Reece turning his pickling liquid into a gel

Emilia in the garden
Reducing her stock now
But not looking good apparently
She wants a clear broth but it is cloudy

Guest chefs are arriving
Callum feeling extra pressure now
Reece has 15mins left now He is feeling more nervous now

He just wants to impress them

Doing his chocolate hazlenut honey crumb now
Using it as a seasoning

Reece just called it a cold dessert, that worried jock a little 15 mins to go and he is freaking

Callum finally gets to start
Going with less is more to let flavours shine
Chunky macadamia nuts
Starting on his davidson plum sorbet
Reece ready to start plating
Doing a sample dish to taste

He says he loves it
Happy with the flavours and textures
2mins till he has to start serving

And plates have gone
He is happy with the dish

Andy says beets are cooked perfectly. Loves the lemon myrtle with goats cheese. Thinks it needs some acid

Mel says its a bit timid
Most like it but dont love it
Has he done enough?

Explaining it to the table now

Picking her peas
And native mint

Adding celeriac to the dish too
Roasting it as wedges
Time to take the raft out

Her broth is a lot clearer
Now to cook her fish

Emilia has 30mins left
Still waiting on the raft.. it has worked perfectly. now to r educe it a bit woo hoo

time to do her fish Skin side down, needs to be crispy
If the fish isn't perfect she could go home...Andy warns her nail that fish.. those judges are perfectionists do not under or overcook

Callum has his sorbet churning now
He has his cromo setting now
Working on a crumble now

Laura cooking her lamb only searing it in the pan.. mmmm
Jock talking to her

Calm outside but so scared inside...now Laura crying

Emilia starting to plate

Did she have a tester fish?

Instructing on how to pour the broth...she really wanted to prove herself
it looks lovely
You can see their passion when they crack explaining what they were trying to achieve she says she is an exceptional cook and has persevered. good on her

Jock says classic flavours of fish and fennel
as they eat I can see they are loving it... Jock and andy are drooling
Skin was crispy
Fish cooked perfectly
Mel loved the broth and cant find a thing t o complain about
someone else loved it
another said they would pay for it

Callum has his prep done quicker than intended
Now adding things to the dish, dangerous kove
Adding an oil
Don’t over complicate it Callum.
And a sherbert

Using darrens method that he learnt more than 10 years ago for the sherbert

Laura cutting her lamb
Pink inside, she is so relieved
Time to plate

She is happy with her dish
Is she ahead of schedule?

Mel thinks she achieved her plan of simple done sophisticated

Mel says the sauce is turbo charged with flavour
Nostalgia and finese
Jock wishes it was on the bone but perfect otherwise

Just Callum left cooking now
That sorbet still looked runny
It does look runny.
Jock says lots going on
He knows it is a risky dish

5mins left now
Test plate?
Callum thinks it tastes delicious

Time to plate
And plates to table
Jock says not something they have seen him do before

Callum says he wanted to show them growth
It is a pretty dish
lots of love in the dish
Sorbet breath of fresh air
Thinks needs less cremo or not be there at all
Mel thinks the sorbet cremo and nuts would be enough
Lack of cohesion in the dish
One of guests says more restraint was needed
Darren agrees that sometimes you can try to fit too much in
Between Callum and Reece but i think Reece going home

2 great dishes secured their place in finals week
1st person to join Reynald is Emilia
She is so relieved
And Laura also relieved

the boys one did too much and the other not enough
Callum your dish was a confusion of flavours. Reece proportions not right and seasoning not there.didn't feel finals worthy
And that is why Reece is going home

Pimms with strawberries and rhubarb

I am watching every move he says

must use one ingredient open pantry and one item from the garden

no one is complaining at the choices

judges talking about caramelising the cabbage.. good lord..that would be the last ingredient!
she w ants a gallette.. channel english garden

rey very british but i can do out of the box cooking is me a french jap dish bream and jap custard and a classical hint of a french verblonc

makes a stock fish stock bones pepper and gets an onion from the garden

Em is enthralled..... recalling her fist winning dish for gordon.. she now realises she has a strong intuition with food and flavour
shoe pastries compressed ( baked) with t he strawberries and rhubarb.. not generally done with s hoe apparently. today is the day to pullout the big guns

Callum is happy he likes gordons choice strawberries rhubarb paprika bay leaf ice cream. oh god callum . slow down..


Laura goes for broccoli cos she can use it all fish a nd brassicas is the go

em is doing the shoe a bit differently tubing it into pans.... messed it up at home.. hoping for third time lucky. if it is wrong .. no time to do it again it takes 45 mins.. perhaps a plan b?

Laura filletting her fish and is keen to be first in semis salted cabbage bbq bream
really keen to win now after coming 2nd in her year

Neither Jock or Andy have seen compressed choux before hope it isnt a shoe fail he says....
Cant see anything in the oven

Frozen paprika and rhubarb meringue is done for Callum now bay leaf ice cream

Jock at Callums bench..shocked at bayleaf icecream.. Andy tastes it... and stuff in the freezer never had this before he says
