When my mum used to make Athenian walnut cake drenched in syrup, she used to trim the edges off and serve the inside pieces to guests. We got the crispy edges to eat. She wouldn't dream of serving an uneven looking piece to a guest with a crust. It had to be a perfect diamond shaped piece.
