she talks to chef
med rare steak.. butter thyme celeriac puree salsa verdi toms
what meat.. eye fillet she says... he nods.... she starts confitting the garlic.. mmmmm

sashi is now happy with mushroom broth chef is suggesting a taste soon sashi is back to pumpkins

now Khanh... talks to chef.... either figs and honey ice cream a nd caramelised figs and tiramisu..... he gets told Chef's wife wins awards for her tiramisu.... he tries the figs.. he is not 100 per cent happy.... but goes with figs.. chef encourages him

chef is pleased with Ben he says make sure no bones.. Ben gets it but is under pressure

Gary talks w ith chef about what people are doing ... he loves what Jess is doing. and of course she is whining about something .. I tune out... all I hear is whining

chef is quite worried over Sashi and the pasta sashi makes a taster....
Chef is a bit annoyed at how sashi is working finally it is ready.. c ant blame chef.. sashi fartasses around

khanh tells us what he is doing... i hear blue cheese and tune out gross

chef is happy with what jess is doing she feels better..she is just worried about overcooking the beef

sashi is whining and I swaer to god just do it sashi.. stop talking v

Ben fears he too is wy behind as he hears chef urge on sashi

chef checks the romescu and is not happy.. too watery... suggests straining it... it looks awful says chef try oil to get it glossy

chef says if you man up to do ravioli do it or else do linguine he has only 8 and they need 30 plus all the r est to do

chef is waiting n a taster from Ben.... ben is behind... one min says chef have you tried everything.. not together.. chef says is bland pasrley wasnt enough to boost flavour

service starts in one min.. and sashi has only 14 done.....

okay service is delayed he has 20 mins
........... lord above he aint doing good today///chef makes him apologise to the servers for being so late.... it is out and looks good judges get it and notie a few things wrong with it filling is good but the pasta is a bit odd. Gary didnt like shittake and pumpkin.... disjointed...not a disaster but not a winner that is for sure

now guess what he has run out of ravioli... oh dear.... go and make em says chef.. you hve two mins or we are not sending them

ben laughs saying if chef had hair he woul be pulling it out

okay Bens dish chef urges him on this hurry is NSW hurry not ld ha ha
judges love the dish Ben finishes in time

now jess ... oh god.... she cuts it...........mmmmmmmmmmm not sure it is medium rare.. parts of it look rare to me.. as she plates chef said warn the waiters that the toms might move around....
judges have it.... cravat loves it.... so do the others......
chef praises jess

now khanh blue cheese mousse not setting chef said get the guns chilling.. it will probably be fine.. yes it is fine...chef urges im on you have to finish

and out it goes judges love the look of it and now they eat... and love it as well... so who is gonna win this one?

so Ben jess and Sashi have to fight for a spot
damn our harbour looks good in t he glistening sunshine. they are in a small boat and it rocks up to an event boat in the harbour

food will be served to gutzes danielle heston and two others I cnot understand cravat. oh shut up sashi.. lord above!!!

staggered start cook whtever you like who wants sweet jess gets it and the others get savoury Ben starts first then sashi a nd then jess

90 mins to cook 7 plates of food.

Ben go for it

he jots ideas.... another crab bisque which went down so well he thinks.... he comes back w ith some lovely vegies and then gets a lovely looking snapper nd crab. He has to make his own stock...hard in 90 mins

but he seems confident. he discusses it with gary and george..... safe is good they agree safe and delicious... push it says gutzy. he concentrates on flavouring the stock and lettingit reduce..... mmmm the crab looks wonderful

sashi do be quiet ha ha 90 mins.... singapore chicken rice... oh serioiusly? out comes the sous vide... he removes the skin for roasting and the flesh for the sous vide. what will make it stand out ask gutzes.... and some new judge.... fried skin????

ben has his bisqe on
for the seafood platter part he takes some more fish...coral trout
will the sweeter onion work with all those flavours they ask

I dunno but I think the onion will be nice. not sure what a sou viche is..... apparently it is overpowering... he needs some vegies to add acidity dutch carrots? roasted?

jess is up now.... black sesame ice cream yuso???? oh dear.... why cant she just make a nice cheesecake? now along comes gutzy she chatters away.. the chef said it is very resturanty.... that has to be good. it looks disgusting to me... but we all know what I think of desserts

sashi talks more than he cooks.... as usual....

ben is under pressure he thinks of different ways of cooking the whiting from the coral trout which is being pan fried

ben plates he likes the souvice.. sorry I have no idea what this is or how to spell it.. carrots good.. whiting in the oven... he is really pushing for time..the whiting is perfect and out it goes. It looks lovely
they eat it.... I hear quite nice, whiting is perfect croal trout is so molist perfectly cooked seasoning is good... even the carrot works

all right bring it sashi
