callum happy not using the quark... how do I make a good dish that is not obvious

Laura bugs brown some butter oil with bones stock for flavour to cook the artichoke and some emulsioms.... not using the fruit.... mongo fruit whatever that is...really keen to impress feels a bit lost

poh going to smoke the duck.. she doesnt have all she wants but manages to do it with flour and sugar

callum doing his dish rare.. he thinks medium rare but thinks judges prefer it rare

Laura seems quite happy with the flavour of the stock

Poh very happy with her sauce too.... just decides it is grainy .. pass through muslin and it aint going through.. only oil coming out...... panics a bit adds water and it seems better.. Jock hovers... she explains......
