callum is sticking to his guns... sometimes it works sometimes not... wants to show Judges something new

Making fish head oil too..pushing thru muslin
Using white vinegar as she has no lemons
she explains dish to mel... is fish an veg enough to get you into the final? Em thinks if she cooks cleanly it is
rey is happy he has two oils different layers of skill
mel asks is he happy yes he said.. it utilises several cultures

she starts assembling as Jock cheers her... she makes a hoe a nd starts filling with creamy custard..... she feels it is the most inventive ever. Jock tells the others it looks perfect and cant wait to try it

I think he may have taken a too big a risk.
it looks more like some sort of salad to me
They love the contrast and think it looks great
Jock says no mistaking the bay leaf
If the bay leaf was toned back it would be great
Needed a link to tie everything together
Andy says he really pushed the boat out
but Some big and conflicting flavours
He can see the potential for it to work but not today
Mel loves how his brain works and thought it was a beautiful looking dish
Laura now
That broth is so clear
Mel says lots of complexity
Clear but deep flavoured broth
Loves the different textures of the veggies
Andy says it is apparent about how to perfectly char the fish skin and set flesh on the fish
Jock likes the broth but feels it needed lemons but still a delicous dish

best dish round one is safe an in round 2 but others are going home
pretty nice looking stuff to choose from everyday stuff
and there is an extrordinary one too truffles an stuff
you can use either of thiese.. but if you end up in rond 2 you have to use the other one'
so what to do go all out or save it

Callum going duck with beetroot quandongs and jerusalem artichokes
Laura going trufles and caviar and turnips.. blah but she loves em....... she makes a mixture of salt to bake the turnips...... turnips the hero the rest to highlight..wants to show how she c an balance intense flavours
rey stirring a lot.. he is nervous
Reynold is doing banto tuna
He said it put him out last time but have grown since then and learned about cooking fish

Callum struggling to open wine ( I guess) as he never using corkscrew before
Judges want Callum to balance all flavours he is going well duck and native ingredients.. Jock has taught him a lot..oh no he w ants to prove them wrong no callum!

I like the looks of this dish

Duck cooked perfectly
Sauce has bags of flavour and works seamlessly
